Found a recipe on the Good Housekeeping website. Bought everything yesterday to make it. It’s blurred out today - I have to JOIN GH+ to see it. D’oh!
So I made this. It’s good, but probably not the greatest for lunch prep. I would also add more stuff, probably mushrooms at least.
I got a mild white miso, it might need a stronger miso. And I put it with brown rice, quinoa or cous cous might have been a better side.
