You can tell a lot about someone by the kind of restaurant they would open if someone forced them to drop everything and open a restaurant.

My pipe-dream is "run away to Amsterdam and run a late night American BBQ food truck in the red-light district."
What kind of American barbecue? It's a big and fractious country.

I'd want a home base to smoke meats, make sides & sauces, and whatnot. Then I'd load it on a food truck and serve it up street food style. Bun/Bowl + Protien + Sauce + Cheese/Coleslaw/whatever.
Dammit now I want a big ass bowl of fried okra and it's all your fault. It's not because I got really high during #Monsterdon . And fried okra is not easy to find in the middle of the night in Minnesotan suburbs, doncha know?

@RamenCatholic @HG @LRRRonEarth there's a restaurant near me that totally changes its theme and menu a couple of times a year, so you could hop periodically from bbq region to bbq region like a tour of great American bbq
