I wonder if Mastodon will let me add those tags to a list. I might not necesarily want my home timeline filled with them.

Lists are available for hashtags in the browser but not all client apps support that.
Lists for user accounts work well too.
As well, you can temporarily mute a specific hashtag for a period of time to keep it out of your timeline.
@FediTips has lots of guidance.
@FediFollows has curated lists.
Many Canadian media can be followed here. @Flipboard can help you find Canadian media. Some like CBCNews will overwhelm your timeline. I have a dedicated Canadian News list.

You can find lots of Canadian news accounts listed at https://fedi.directory/tag/canadian-news
Paste an account's address from the website into your Mastodon server's search box to follow it. Click on an account's address to see more info about it.
Some of them post a lot as they are news feeds. If they feel like they're overwhelming your feed, you can use Lists to put them in their own mini-timeline (more info https://fedi.tips/how-to-use-the-lists-feature-on-mastodon ).
@JesseF8693 @mayintoronto I only follow a few accounts but follow dozens of hashtags. Tusky supports following hashtags. Click a hashtag and then click the person icon at the tip right.
